This peach crisp recipe requires canned peaches and a quick oatmeal crumble on top. Simple and delicious.
I don’t use puff pasty a lot, but I will have to buy this more often – yum.
After rolling out the sheet of refrigerated dough, I cut it into four squares per sheet with a pizza cutter, about 3 inches or so per side, and put them on a baking sheet lined with parchment. I poked several holes in each square with a fork to allow for fluffier baking. I allowed some room around the outside as a crust.
This recipe uses four sheets of puff pastry.

Top the pastry squares with a simple egg wash.
I mixed one egg with 1 tablespoon of water, then brushed the egg wash over each pastry to help them brown and crisp up nicely.

The cream cheese layer is a quick mix of 4 ingredients.
In a small bowl, I combined 8 ounces of softened cream cheese, 1/3 cup of sugar, 1 teaspoon of lemon juice, and 1/2 tsp of vanilla with a whisk.

Spread the cream cheese mixture onto the puff pastry.
The amount allows for a generous layer of cream cheese. It’s so good – use it all up.

I used canned filling – because I had some leftover – but fresh fruit and jam work too.
We had a campfire a few nights ago and made fruit pies on the fire – so I had some canned apple pie filling to use up. I simply chopped up the apples and topped these Shortcut Cream Cheese and Fruit Danishes with the filling. I topped the apples with some cinnamon and sugar.
If not using filling – use strawberry jam and cut up strawberries or do the same thing with peaches or raspberries. You can’t go wrong.

Bake at 400 degrees for 15 minutes or until the edges are golden brown.

Fluffy, sweet, and oh so good.
