Homemade Sausage Tortellini Soup

There are many options for recipes using frozen tortellini, but this Sausage Tortellini Soup is a great option. Made with all healthy, natural ingredients in just one pot, this recipe is as easy as it is tasty.

Tortellini can be put to many good uses.

I recently got a bag of frozen tortellini on my grocery pickup for something different. The bag was huge, and so I was convinced to find several different ways to use them up. They are good served warm and topped with pasta sauce, of course, or served in a cold pasta salad with veggies and Italian dressing. However, since I am a fan of a good bowl of soup that can be made in one pot, this Homemade Sausage Tortellini Soup really appealed to me!

This can be made with a beef broth or chicken broth base.

This Homemade Sausage Tortellini Soup can really be made to your taste preference. I used ground sausage, but chopped link Italian sausage would also work here. I used a combination of chicken broth and beef broth in this version. Spinach was added to this soup, but next time I make it I’m thinking of adding some chopped zucchini. That would be so good!

With a chicken base, you could use chicken instead of sausage, add some half and half to the broth to make it creamier and keep the spinach in it. Hmmm… I may have to try that one.

Cook the sausage in the pot first, then add your spices.

step 1:

Cook one pound of Italian sausage in a stockpot over medium-high heat. Add in 1 medium chopped onion, cooking until the onion has softened.

Next, add the seasonings, which include:

  • 3 cloves minced garlic
  • 1 teaspoon each of dried basil, oregano, parsley and thyme
  • 1/2 teaspoon crushed red pepper

Cook for several minutes to allow the flavors to combine.

How to Make a DIY Spice Drawer

Try making a spice drawer – it makes cooking in the kitchen so much easier! These labels are easy to make on a Cricut machine or printer and printed onto adhesive label paper. It’s an easy project that makes a big difference!

Add in the broth ingredients.

Add in these broth ingredients:

  • Equal parts beef broth and chicken broth (2 cups of each)
  • One can of diced tomatoes with green chiles, but fire roasted tomatoes would also work great
  • Tomato paste, about 2 tablespoons

Allow the broth to cook on medium-high heat until it just comes to a boil, then turn down heat and cook on low heat for 5 minutes.

Add frozen tortellini and let cook until desired tenderness.

Add the frozen torteillini to your pot. After the tortellini is cooked, add in the spinach or arugula, whichever you prefer. Cook just long enough for the greens to soften in the broth just prior to serving.

Homemade Sausage Tortellini Soup is a great way to use frozen tortellini. Made in one pot with healthy ingredients makes for a great dinner!

Servings 6 people

Ingredients

  • 1 pound Italian sausage, ground or links to preference
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp thyme
  • 1/2 tsp crushed red pepper
  • 2 cups beef broth
  • 2 cups chicken broth
  • 2 tsp tomato paste
  • 1 can diced tomatoes with green chiles
  • 3 cups frozen cheese tortellini
  • 1 cup arugula or spinach

Instructions

  • Cook sausage in stock pot until browned.
  • Add in diced onion, cooking until translucent.
  • Put spices in the pot: Garlic, basil, oregano, parsley, thyme and red pepper. Cook several minutes to combine.
  • Add in the stock: Beef or chicken broth, diced tomatoes and tomato paste.
  • Bring stock to a boil, then reduce heat and cook 5-10 minutes.
  • Add in frozen tortellini. Cook on medium heat for 20-30 minutes to desired tenderness.
  • Add greens (arugula or spinach) until just cooked.
  • Top with shredded cheese and serve.
