Homemade Loaded Potato Soup
Make this Homemade Loaded Potato Soup in one pot, with less than 15 minutes of prep time. By using frozen diced potatoes as a shortcut, you can have this soup ready and on the table way faster than traditional potato soup.

It’s a true lifesaver. This Homemade Loaded Potato Soup basically consists of measuring out ingredients and dumping it in the pot to cook. It doesn’t get much easier.

Homemade Broccoli Cheddar Soup
After chopping the broccoli, the rest of the ingredients just get added to the pot and it cooks itself into a delicious creamy broccoli soup, straight from your own kitchen.

This healthy, low calorie chicken tortilla soup takes only one pot, requires no special ingredients and is excellent topped with cheese, sour cream and tortilla chips.
This soup requires very little prep- just dice an onion and add the rest of the ingredients.
step 1:
Chop up 1/4 cup of onion (about half of a medium onion). Add it to the stock pot with 1 tsp of olive oil and 1 tsp of minced garlic. Cook over medium heat until onion is soft and translucent.

step 2:
Add in 1/4 cup matchstick carrots, cooking until slightly softened.
step 3:
Add to the pot 3 teaspoons of chopped salted butter, stirring until butter is melted.

step 4:
Add in 1/4 cup flour, mixing until the mixture becomes thick.

step 5:
Stir in the broth ingredients: 2 cups of chicken broth and 1 cup of milk or half and half.
step 6:
After putting in the broth ingredients, add 1/4 tsp thyme, 1/4 tsp. each of salt and pepper.

step 7:
Next, add in 1/4 cup of sour cream, 3 ounces of cream cheese, and 1/4 cup shredded cheddar cheese. Mix until all ingredients are melted into the broth.

step 8:
Add 3 cups of diced potatoes, stirring occasionally for 20-30 minutes until the potatoes are soft.

Tip: Cook the potatoes in a skillet pan prior to adding to the soup if you don’t want to wait 20-30 minutes for them to soften. This would save you even more time with this easy one pot Homemade Loaded Potato Soup.
For even more flavor, add a few pieces of cooked, crumbled bacon.
step 9:
While the soup is cooking on the stove over medium heat, cook some bacon to add to the soup. I add about 1/2 teaspoon of the bacon grease to the soup as well, just for more bacon flavor.

Want the soup not so thick? Just add more chicken broth or milk.
This comes out pretty thick, which is how I prefer it. If you like it thinner, just add another cup of chicken broth or milk until you get this soup to the desired consistency.

Homemade Loaded Potato Soup
Ingredients
- 1/4 cup onion, chopped
- 1 tsp olive oil
- 1 tsp minced garlic
- 1/4 cup matchstick carrots
- 3 tsp butter, salted
- 1/4 cup flour
- 2 cups chicken broth
- 1-2 cups milk or half and half, to desired thickness
- 1/4 tsp dried thyme
- 1/4 tsp salt and pepper
- 1/4 cup sour cream
- 3 oz cream cheese
- 1/4 cup cheddar cheese, shredded
- 3 cups frozen diced pomatoes
- 1/4 cup bacon, cooked and crumbled
- 1/2 tsp bacon grease
Instructions

- Add in 1/4 cup matchstick carrots, cooking until slightly softened.
- Add to the pot 3 teaspoons of chopped salted butter, stirring until melted.
- Next, put in 1/4 cup flour, mixing until the mixture becomes thick.
- For the broth, add in 2 cups of chicken broth and 1 cup of milk or half and half. (You can always add more after soup is done if too thick!)
- After putting in the broth ingredients, add 1/4 tsp thyme, 1/4 tsp. each of salt and pepper.
- Next, add in 1/4 cup of sour cream, 3 ounces of cream cheese, and 1/4 cup shredded cheddar cheese. Mix until all ingredients are melted into the broth.
- Add 3 cups of diced potatoes, stirring occasionally for 20-30 minutes until the potatoes are soft.
- While the soup is cooking, cook 4-5 pieces of bacon on the stovetop. Crumble the bacon and add it, and 1/2 tsp. bacon grease to the soup mixture for added flavor.
- Add more milk or half and half is needed to desired thickness. Enjoy!
